This easy tortilla soup is quick to make, tastes great, and is ready in no time. Great for a cozy dinner during the week or a casual get-together with friends.
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 14
- 5 ounce can diced tomatoes
- 4 cups chicken or vegetable broth
- 1 cup corn kernels
- 1 cup cooked black beans
- Salt and pepper to taste
- Juice of 1 lime
- 2 cups tortilla chips
- 1 avocado, diced
- Fresh cilantro, for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion and garlic, saut until softened
Stir in ground cumin and chili powder, cook for 1 minute
Add diced tomatoes, broth, corn kernels, and black beans
Season with salt and pepper to taste
Simmer for 15-20 minutes
Stir in lime juice
To serve, divide tortilla chips among bowls
Ladle soup over chips and top with diced avocado
Garnish with fresh cilantro
