Ingredients:
- 8 ounces fettuccine pasta
- 4 Italian chicken sausages, sliced
- 2 cups cherry tomatoes, halved
- 1 cup fresh basil leaves, chopped
- 8 ounces fresh mozzarella cheese, diced
- 3 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- Salt and black pepper to taste
- Grated Parmesan cheese for garnish
Instructions:
Cook fettuccine according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add minced garlic and cook until fragrant, about 1 minute
Add sliced Italian chicken sausages to the skillet and cook until browned, about 5-6 minutes
Add cherry tomatoes to the skillet and cook until they start to soften, about 2-3 minutes
Stir in cooked fettuccine, chopped basil leaves, and diced mozzarella cheese
Cook for an additional 2-3 minutes until everything is heated through
Season with salt and black pepper to taste
Garnish with grated Parmesan cheese before serving
Serve hot and enjoy!
