Packed with vegetables and protein, this quick and simple stir-fry of tofu and quinoa is a filling and healthful supper. It requires less than 20 minutes of cooking time and only a few basic ingredients, making it ideal for hectic weeknights.
Ingredients:
- 200g tofu, diced
- 1 cup cooked quinoa
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp ginger, grated
- 1 tbsp olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions:
In a big skillet set over medium-high heat, warm up the olive oil
Add the chopped tofu and cook for about 5 minutes, or until golden brown
Saut the grated ginger and minced garlic for an additional one to two minutes
Add the broccoli florets and sliced bell pepper, and cook for 34 minutes, or until the vegetables are crisp but soft
Include the rice vinegar, sesame oil, and soy sauce in the skillet with the cooked quinoa
Mix thoroughly to blend
To taste, add salt and pepper for seasoning
Before serving, sprinkle some chopped green onions on top
