Ingredients:
- 1 lb ham, diced
- 4 cups potatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 8 eggs
- 1 cup milk
- 1 cup cheddar cheese, shredded
- 1 tsp garlic powder
- Salt and pepper to taste
- Chopped parsley for garnish optional
Instructions:
Preheat the oven to 375F 190C
In a large oven-safe skillet, cook diced ham over medium heat until lightly browned
Add chopped onions and diced potatoes to the skillet, cooking until potatoes are slightly tender
In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper
Pour the egg mixture over the ham and potato mixture in the skillet
Sprinkle shredded cheddar cheese on top
Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the eggs are set
Garnish with chopped parsley if desired
